- 01Pan de maíz de la selva & hierbas del huerto · warm, oven-baked traditional corn bread with whipped butter of wild garden herbs and a touch of garlic
- 02Carpaccio de papaya “La Seta” · green and half-ripe papaya from our garden, fine Parmesan, olive oil, fresh lime, red peppercorns and wild jungle basil
- 03Seta mushroom essence · El Mensajero Cósmico · a crystal-clear essence of mushrooms, a tribute to the mycelium, poured hot at your table over crispy homegrown yuca straw and wild cilantro oil
- 04Pacific mahi-mahi with earth textures · Golfo Dulce mahi-mahi skewered with sweet mango, lacquered with a mushroom glaze, on a velvety forest mushroom risotto
- 05The refined beef “chicharrón” · tender striploin with a crispy chicharrón crust of garlic, cumin and mandarina lime, on Costa Rican entomatada with mushroom essence and golden yuca cakes
